Ah, covers...a subject close to my heart. Current faves are the Smithereens note for note cover of the entire Meet the Beatles, k.d. lang's cover of Helpless from "Away from Her", and a bootleg of Jeff Tweedy of Wilco covering Blondie's "Dreaming"

if you are a fan of The Band check out Endless Highway, it's all covers of Band tunes. My Morning Jacket's take on Makes No Difference will knock your socks off
